Custom Catering – Special Event

“Sail South Texas”

When the Committee for “Sail South Texas” approached us in early 2010 to cater their International Extravaganza welcoming the Tall ships from Latin America to our community, we were elated! The Community event, commemorating the Bicentennial of Latin American Independence and our 234th year of Independence was held from June 30th to July 4th, and based at the former Naval Station Ingleside.

Catered responsibilities ranged from concessions stands and VIP hospitality daily, to nightly VIP cocktail and dinner receptions, honoring dignitaries from various South American Countries and Mexico. In order to meet food service challenges, a complete temporary kitchen was constructed for the event with two separate staging areas. Each night featured a dish from a different represented country, much to the delight of our foreign guests.

Items on the menu included:

Butler Passed:

  • Pecan-havarti Quesadillas with fresh Pear Chutney
  • Chorizo-stuffed Mushrooms
  • Coffee-glazed Quail Leg

Station 1:

  • Oyster shooters – Jalapeno Vodka, Rum Mango, Tequila Lime
  • Pecan-Crusted Crab Cakes with Mango Slaw and Chipotle-lime Aioli
  • Shrimp Diablos

Station 2:

  • “Chiles en Nogada” (Featured Regional Dish from Mexico)
  • Prime Roast Beef with Au jus, Jalapeno Béarnaise, Sour Cream Horseradish
  • Baby Stuffed Potatoes
  • Roasted Asparagus Bundles

Dessert Station:

  • New York Style Individual Cheesecake with Red and Blueberries
  • Pecan Pie Cobbler with Cinnamon Whipped Cream
  • Chocolate Decadence
